Tomato Chutney



Tomato chutney is one of the South Indians favourite chutney for Dosa , Idly ....Tomatoes, which are actually a fruit and not a vegetable, are loaded with all kinds of health benefits for the body. They are in fact, a highly versatile health product and due to their equally versatile preparation options, there’s really no reason to neglect the tomato as part of a healthy diet.

Ingredients:

To make chutney:

Tomato - 3 to 4 nos
Coconut - 1 cup
small onion - 1 cup
Big onion - 2
Garlic - 3 pods
Mint leaf - 1/2 bunch
Dry red chillies - 3
Tamarind - a very small piece ( 1 inch)
salt - to taste

To garnish:

Curry leaf - 2 stem
Urad dal - 1 spoon
Mustard seeds - 1 spoon
oil - 1 spoon




Method:

Peel onions and cut into pieces . Cut tomatoes , garlic , mint leaves into pieces.



Heat oil in heavy bottomed pan add all ingredients that are in making chutney except coconut and fry for sometimes until raw smell goes.Put it in blender , allow it cool then fry coconut for sometime and put also in blender add salt to your tase and grind to smooth like chutney dont add water to grind .

Heat oil in pan add mustard seeds and urad dal after mustard splutter add curry leaf and add to chutney.Tasty tomato chutney is ready ... serve with dosa

Badam Halwa

Ingredients:

Almonds - 1 cup
Milk - 1/2 cup
sugar - 1 cup
ghee - 3 - 4 spoons

Method:

Soak almonds for half an hour. so you can peel off the skin from almonds otherwise you can put sometime in boiling water so that you can easily peel off.After you peel all almonds put in blender add milk until all almonds cover and blend like dosa mix.Heat ghee in heavy bottomed pan add sugar with blended mix and let heat and mix with stick continuously dont let it free for single minute and place flame in low after mix turn to halwa like substance switch off flame and pour into tray spreaded with ghee.Let it cool .Enjoy richness taste...

Drumstick Masala


Drumstick - Drumstick curries are one dish, which is left off and not eaten by many of us. Drumstick according to health experts is said to be a wonder stick. It’s health benefits are plenty and it is said to cure many an ailments.

Ingredients:

Drumstick - 3
Big Onion - 1
Tomato - 1
Garlic - 3
Turmeric pwdr - 1/2 spoon
chilly pwdr - 1 spoon
pepper pwdr - 1 spoon
Curry leaf - 1 stem
salt - to taste

Method:
Cut drumstick into small pieces.Chop onion, tomato , garlic finely. Heat oil in pan add mustard seeds , when seeds crackle add curry leaf , onion , garlic , when onion slightly brown add tomato , after tomato cooked add drumstick , turmeric pwdr, chilly pwdr,fry for 3 mins then add water required quantiy,remember the recipie has to be thick gravy so add only required water.After drumstick cooked allow gravy to be thick atlast add pepper pwdr and switch off the flame.Serve hot with chappathi or curd rice.

Tomato Dosa



Tomatoes- Tomatoes are full of vitamins. They are rich in vitamin C, vitamin A, vitamin B1, B2 and B6 and the minerals potassium, phosphorus and magnesium. Furthermore they are full of carotene. The body makes vitamin A from carotene. They transport waste products from the body.
Ingredients:

To Grind:

Rice - 2 cup
Tomatoes - 4
Ginger - 10 grams
Redchilly -3
Anise- 1 spoon
salt - 2 spoon

To Mix:

Small Onions - 100 grams
Corainder leaf - 5 stems
Curry leaf - 3 stems

Method:

Soak rice upto 3 hours , Grind the ingredients in first portion, cut small onions , corainder leaf, curry leaf into very small pieces mix with that grinded portion . Heat dosa pan and do like dosa , after cooked serve hot with coconut chutney or mint chutney or with ketchup.Tasty tomato dosa is ready.

Carrot Payasam

Carrots-Carrots are credited with many medicinal properties;Carrot is rich in alkaline elements which purify and revitalize the blood. They nourish the entire system and help in the maintenance of acid-alkaline balance in the body. The carrot also has a reputation as a vegetable that helps to maintain good eyesight

Ingredients:

Carrot-2
Sugar-halfcup
cashewnuts-5-6
cardamom powder-half teaspoon
Milk-1 litre
Ghee-3 tablespoons
saffron-3-4 pieces

Method:

Wash carrot and cut into medium size pieces.Put Carrot in cooker and leave 2-3 whistles.Then after carrot becomes cool put in blender and grind it to smooth paste.
Make Pan hot and pour the paste and add sufficient sugar to it,after sugar dissolves add boiled mik and make it boil for 2-3 minutes.Add cardamom powder ,Fry cashewnuts
in one tablespoon of ghee and add to that mixture,atlast add saffron powder to it.
Serve hot to those who like hot and also you can refridgerate and serve as cold.
