Coriander/Cilantro chutney

We all know about coriander chutney moreover....but i wish share a my grandma's prep...I like it very much....And I wish to share....




Ingredients:

Coriander leaf - 1 cup ( Washed and stem removed)
Shallots - 10 nos (peeled and chopped)
Tomato - 1 chopped
Red chilly - 3
mint leaf - 5 nos
Garlic - 3 nos peeled
Chana dal - 1 sp
Urad dal ( whole ) - 1 sp
Coriander seeds - 1 sp
cumin seeds - 1 sp
Tamarind (optional ) - just piece
Coconut grated - 5 sp
salt to taste

For Garnish :

oil - 2 sp
mustard seed - 1sp
urad dal (splitted ) - 1sp
Curry leaf - 2-3

Method:

1.Fry chanadal,uraddal,corainder seed,cumin seed, red chilly until slight golden brown kept aside.
2.Fry Corainder leaf and mint leaf until leaf shrinks.
3.Heat oil in pan add shallots,tomato,garlic fry until raw smell goes.
4.Put all 1,2,3 in blender with coconut and salt ,blend it to smooth or chutney consistency.
5.Heat oil add urad dal and mustard ..after splutter add curry leaf garnish ..serve with rice,dosa ,Idly

Am Back with Spicy Pepper Chicken

I took a long break in blogging...and am come back with a boost:)

Pepper chicken Dry....



Ingredients:

chicken - 250 gm
Medium size onion -1 (finely chopped)
Tomato - 1 (finely chopped)
Green chilly -2 chopped
Whole garam Masala (Cardamom- 3,Cinnamon -2 ,Cloves -3,Bay leaf -2)
Turmeric pwdr - 1 spn
Chilly pwdr -1 spn
Corainder pwdr - 2 spn
Cumin pwdr - 1/2 spn
Pepper corn - 10- 15 crushed
Corainder leaf - 1 bunch chopped
Ginger garlic paste - 1 spn
mint leaf - if u wish ( I prefer )
Curry leaf - 1 stem
oil -2 spn
Mustard -1 spn
cumin - 1spn
Salt as per ur taste

Method :

1.Wash chicken well.
2.Heat oil in heavy bottomed pan.
3.Add mustard and cumin seeds.Add Whole Garam Masala .When starts splutter add chopped onions and curry leaf fry until golden brown.
4.Add ginger garlic paste , tomato fry till raw smell leave..Add all spices ...and fry for a minute.
5.Add chicken and fry till all spices coat well.Adjust seasoning with salt.
6.Cover and simmer for 10 -15 mins . Cook until chicken almost done .
7.Leave until full dry if u need else u can garnish with corainder leaf and switch off.
8.Server hot with roti,dosa,rice or paratha

Vegetable Tikka Masala



Vegetables Makes our dish tasty and healthy..I try tikka masala with vegetables let me know ur comments feel free to post..

Ingredients:

Plain Yoghurt 250 ml
Lemon 1/2 squeezed
Ginger root 1 inch
onions 2 chopped
Garlic Gloves 3 (chopped)
Turmeric pwdr 1 tbsp
Cinnamon Pwdr 1/2 tbsp
Red chilly Pwdr 1 tbsp
Corainder pwdr 2 tbsp
Butter 2 tbsp
Fresh Vegetables(I Prefer Cauliflower,Peas,Carrot,Potato,Capsicum..)2 cups
Cardamom 10 pods
Corainder leaves 1/2 cup
Salt and Pepper to taste

Method:

1.Chop the vegetables and wash it.
2.Combine Yoghurt and choped onion,ginger,garlic into blender.
3.Blend until smooth add lemon juice, salt and pepper.Lightly mix
4.Add spices except cardamom ..blend all the spices.nicely.
5.Add Few corainder leaves and blend all.
6.Add butter to preheated pan....add the blended mix and cardomom pods until raw smell goes.
7.Add vegetables and mix it add rest corainder leaves..cook vegetables as ur liking half boil gives nice taste...serve with roti or pulka.

Fruity Sprout Salad


Salad Makes healthy ...I try to add some extra taste and more healthy using sprouts it comes well ..I hope all enjoy this and let me know Ur comments..

Ingredients:

1 cup Sprouts ( Moong dal , Chick peas )
1 Orange Segmented,peeled,deseeded
1 apple chilled and chopped
And u can add Fruits as ur wish

For Dressing :

1 tbsp lemon juice
1 tbsp vinegar
1 tbsp golden syrup or honey
1/4 tbsp pepper powder
salt to taste

Method :

1.chop apple in thin slices.
2.Put all fruit in large salad bowl.
3.Add sprouts and Mix all thoroughly.
4.Five minutes before serving , pour dressing over fruit . Mix with fork gently .

Ginger Soup



Ingredients:

20 gms Ginger
10 gms Garlic
10 gms Corn flour
50 gms Cabbage
50 gms Carrot
1 tsp vinegar
20 gms Capsicum
1 Spring onion
pinch pepper powder
1 tsp soysauce
1 tsp oil
1 ltr water
salt to taste
corainder leaves for garnishing

Method:

1.Chop the vegetables and ginger.
2.Heat oil and fry ginger add garlic and vegetables ..pour water and let to boil.
3.Now add corainder leaves,soya sauce,vinegar.
4.When it boils add corn flour paste.U can add Green chilly accordng to ur Spice level.( I Prefer)
4.Finish soup with spring onions and serve hot.

Apple Banana Carrot Halwa




Halwa is sweet dish made easily and children love most....u can make it healthy....By Apple , banana ,carrot all these is very healthy u can try it

Ingredients:

Apple peeled and chopped - 1
Banana chopped - 1
Carrot grated - 1
Milk - 1 cup
Coconut grated - 1/2 cup
Sugar - 1/2 cup
ghee -1/4 cup
Color if u wish
Nuts as u wish

Method:

1.Boil the milk at let it be cool
2.Grind grated carrot with milk , mix all ingredients except ghee and nuts.
3.Heat pan and add a spoon of ghee and pour the mixture.
4.Mix it well...until it comes to required ( halwa ) consistency.
5.Add color as of ur wish i prefer orange red .
6.Mix remaining ghee and simmer the stove...
7.Slice nuts as much as thin ( Almonds , pista ,cashew) garnish and serve it.

Kai kari chettinad - Oven Made



Ingredients:

Carrot,beans,potato diced - 1 cup
Green peas - 1/2 cup
Cauliflower florets - 1/2 cup
Extra vegetables for Ur wish
pepper corn crushed - 1 tpsp
mint & corainder paste - 2 tpsp
ginger garlic paste - 3 tpsp
turmeric powder - 1 tpsp
red chilli powder - 1 tpsn
garam masala - 1 tpsp
jeera - 1/2 tbsp
lime juice - 1 no
tomato paste - 2 tpsp
oil - 50 ml
onions chopped - 1 no
cashew paste - 2 tpsp
salt to taste

Method:

1.Add some salt to vegetables and boil it for 5 minutes .
2.In another bowl take oil , add onions , ginger garlice paste.Microwave at high power for 3 minutes . Stir every minute.
3.Add Tomato paste , spices ,mint corainder paste , 1/4 cup water.Microwave on medium power for 5 minutes.
4.Add cooked vegetables,cashew paste (Soak cashew in water and grind it),black pepper crush , lime juice and salt mix well ..microwave for 2 minutes....let it stand for 2 minutes...garnish with chopped corainder .
5.Serve hot with roti,chappathi or nan

Sweet mini pan cake

Pan cake is our Indians favourite dish.But I tried new one with sweet.Let me know ur comments...

Ingredients:

All purpose flour(maida) - 1 cup
Sugar - 1 cup
semolina - 1 cup
milk - 1 cup
egg - 3 nos
cooking soda - a pinch

Method:

1.In large bowl add semolina,sugar,milk,cooking soda and mix well and keep it aside for one hour.
2.Break eggs and add with that mixture .
3.Heat Pan add ghee or oil in all holes as ur wish.
4.Pour the batter in all holes , after one side done turn other side slowly and allow to cook until golden color.
5. serve hot.

Stuffed Roti(Paneer)

Paneer is favourite one for vegetarian lovers and also good one for health.Paneer is a protein-rich food.Let me try this one and enjoy the taste...

Ingredients:

For roti:

Atta - 200 gms
water to form dough
salt to taste
oil - 2 tsp

For Stuffing:

paneer - 100 gms
onion - 50 gms
tomato - 30 gms
green chilly - 4
chaat masala - 1 tsp
chopped corainder - 2 stem
oil - 2 tsp
salt to taste

Method:

Roti:

1. In a bowl put atta , water , salt oil .
2. Form like a dough cover it and rest the dough for some time.
3. Knead the dough again and divide into 4 rounds.
4. Flatten roll into roties , heat oil in dosa pan and do chappathi asusual.
5. Roti is done.

Stuffing:

1.Grate paneer and chop onion , tomato , chilly ,corainder leaf .
2.In heat pan add oil , onion fry until pink and tomato , chilly fry.
3.After that add chaat masala and paneer and fry for 3 mins add salt.
4.Stuffing is done.
5.Spread the mixture across the roti , sprinkle corainder and fold over.
6.Hold the folded roti in place using toothpick.
5.If need place folded rotis in dosa pan and heat .
6.Serve hot.

Egg Masala

The egg is a nutrient-dense food, containing high quality protein and a wide range of essential vitamins, minerals and trace elements. Try this one...

Ingredients:

Egg - 3 no
Ginger paste - 1 spoon
Garlic paste - 1 spoon
Tomato paste - 1 spoon
chilly pwder - 1/2 spoon
Turmeric pwdr - 1 spoon
salt - to taste

Method :



1.Boil the eggs and allow it to cool.
2.Heat oil in pan add ginger , garlic paste .
3.Add tomato paste and chilly pwdr ,turmeric pwdr and salt.
4.Cut eggs using egg cutter or knife.
5.Put eggs in that pan and mix carefully.
6.Serve hot with any variety of rice.

Cauliflower Rice

Cauliflower contains vitamin K, the blood-clotting vitamin produced naturally by bacteria in our intestines.Its easy to prepare.Try it..
Ingredients:

Basmati rice - 1 and half cup
Cauliflower - 2 cup
Tomato ketchup - 2 spoon
Cumin seeds - 1 spoon
Green chilly - 2
cloves - 3 no
Salt - to taste
Corainder leaf - 1 stem

Method:

1.Boil the rice upto 90% so that it will not touch others.
2.Boil cauliflower in salted water until soft.
3.pour oil in pan add cumin seeds,cloves,green chilly and fry.
4.Add boiled cauliflower fry until brown add salt and ketchup.
5.Garnish with corainder leaf and serve hot.

Tomato Chutney



Tomato chutney is one of the South Indians favourite chutney for Dosa , Idly ....Tomatoes, which are actually a fruit and not a vegetable, are loaded with all kinds of health benefits for the body. They are in fact, a highly versatile health product and due to their equally versatile preparation options, there’s really no reason to neglect the tomato as part of a healthy diet.

Ingredients:

To make chutney:

Tomato - 3 to 4 nos
Coconut - 1 cup
small onion - 1 cup
Big onion - 2
Garlic - 3 pods
Mint leaf - 1/2 bunch
Dry red chillies - 3
Tamarind - a very small piece ( 1 inch)
salt - to taste

To garnish:

Curry leaf - 2 stem
Urad dal - 1 spoon
Mustard seeds - 1 spoon
oil - 1 spoon




Method:

Peel onions and cut into pieces . Cut tomatoes , garlic , mint leaves into pieces.



Heat oil in heavy bottomed pan add all ingredients that are in making chutney except coconut and fry for sometimes until raw smell goes.Put it in blender , allow it cool then fry coconut for sometime and put also in blender add salt to your tase and grind to smooth like chutney dont add water to grind .

Heat oil in pan add mustard seeds and urad dal after mustard splutter add curry leaf and add to chutney.Tasty tomato chutney is ready ... serve with dosa

Badam Halwa

Ingredients:

Almonds - 1 cup
Milk - 1/2 cup
sugar - 1 cup
ghee - 3 - 4 spoons

Method:

Soak almonds for half an hour. so you can peel off the skin from almonds otherwise you can put sometime in boiling water so that you can easily peel off.After you peel all almonds put in blender add milk until all almonds cover and blend like dosa mix.Heat ghee in heavy bottomed pan add sugar with blended mix and let heat and mix with stick continuously dont let it free for single minute and place flame in low after mix turn to halwa like substance switch off flame and pour into tray spreaded with ghee.Let it cool .Enjoy richness taste...

Drumstick Masala


Drumstick - Drumstick curries are one dish, which is left off and not eaten by many of us. Drumstick according to health experts is said to be a wonder stick. It’s health benefits are plenty and it is said to cure many an ailments.

Ingredients:

Drumstick - 3
Big Onion - 1
Tomato - 1
Garlic - 3
Turmeric pwdr - 1/2 spoon
chilly pwdr - 1 spoon
pepper pwdr - 1 spoon
Curry leaf - 1 stem
salt - to taste

Method:
Cut drumstick into small pieces.Chop onion, tomato , garlic finely. Heat oil in pan add mustard seeds , when seeds crackle add curry leaf , onion , garlic , when onion slightly brown add tomato , after tomato cooked add drumstick , turmeric pwdr, chilly pwdr,fry for 3 mins then add water required quantiy,remember the recipie has to be thick gravy so add only required water.After drumstick cooked allow gravy to be thick atlast add pepper pwdr and switch off the flame.Serve hot with chappathi or curd rice.
